Ingredients
  • 3 cups all-purpose flour
  • 1 cup warm milk
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 2 tablespoons granulated sugar
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon salt
  • 4 cloves garlic, minced
  • 1/4 cup chopped fresh dill
  • Vegetable oil, for frying
Instructions
  1. In a small bowl, dissolve the yeast and sugar in warm milk. Let it sit for about 5 minutes until frothy.

  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture, beaten eggs, and melted butter.

  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.

  4. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

  5. Punch down the dough and divide it into 12 equal portions. Roll each portion into a ball and place them on a lightly floured surface.

  6. Cover the dough balls with a kitchen towel and let them rise for another 30 minutes.

  7. In a shallow bowl, combine the minced garlic and chopped fresh dill.

  8. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).

  9. Gently flatten each dough ball into a disk, then make an indentation in the center with your thumb. Dip each pampushka into the garlic-dill mixture, coating it well.

  10. Fry the pampushky in batches for 2-3 minutes on each side until golden brown and cooked through.

  11. Remove the fried pampushky from the oil and drain on paper towels.

  12. Serve the Ukrainian pampushky warm as a delicious side dish or snack, perfect for dipping in soups or enjoying on their own!
