  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 teaspoon red pepper flakes (optional)

Instructions
  1. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes.

  3. Add the shrimp to the skillet and season with salt, pepper, and red pepper flakes (if using). Cook the shrimp until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

  4. In the same skillet, add the remaining tablespoon of olive oil. Add the cooked pasta to the skillet along with the lemon zest and lemon juice. Toss to coat the pasta in the lemon garlic sauce.
