  1. Rinse the dried brown lentils under cold water, then place them in a saucepan and cover with water. Bring to a boil over medium-high heat, then reduce the heat to low and simmer for 20-25 minutes, or until the lentils are tender. Drain and set aside.

  2. In a separate saucepan, cook the white rice according to package instructions until fluffy and tender. Set aside.

  3. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

  4. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened and translucent, about 3-4 minutes.

  5. Stir in the diced tomatoes, tomato paste, ground cumin, ground coriander, and ground cinnamon. Season with salt and pepper to taste. Cook for another 5-6 minutes, stirring occasionally, until the sauce is thickened and fragrant.
