  1. Season the chicken pieces with salt and pepper. In a large Dutch oven or heavy-bottomed pot, melt the butter over medium heat. Add the chicken pieces and brown them on all sides. Remove and set aside.

  2. In the same pot, add the diced bacon and cook until crispy. Add the chopped onions, sliced carrots, and minced garlic. Cook until the vegetables are softened.

  3. Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes, then add the tomato paste and mix well.

  4. Return the chicken pieces to the pot. Pour in the red wine and chicken broth, making sure the chicken is submerged. Bring to a simmer, then cover and cook for 1 hour over low heat.

  5. After 1 hour, add the halved mushrooms to the pot. Continue to simmer, uncovered, for an additional 30 minutes, or until the chicken is cooked through and tender.

  6. Once the chicken is cooked, remove it from the pot and keep warm. If the sauce is too thin, you can thicken it by simmering it uncovered until reduced to your desired consistency.

  7. Serve the Coq au Vin hot, garnished with fresh parsley. It pairs well with crusty bread, mashed potatoes, or steamed rice.
