Japanese Chicken Teriyaki is a popular dish known for its sweet and savory flavor profile. Tender chicken thighs are marinated in a homemade teriyaki sauce, then grilled or pan-seared to perfection. In a small bowl, whisk together soy sauce, mirin, sake, brown sugar, honey, garlic, and ginger to make the teriyaki sauce.
Place the chicken thighs in a shallow dish or resealable plastic bag. Pour half of the teriyaki sauce over the chicken, reserving the remaining sauce for later. Marinate the chicken in the refrigerator for at least 30 minutes, or up to 2 hours.
Heat vegetable oil in a large skillet or grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade. Cook the chicken for 6-8 minutes per side, or until fully cooked and caramelized, brushing with the reserved teriyaki sauce during the last few minutes of cooking.
Once cooked, remove the chicken from the skillet and let it rest for 5 minutes. Slice the chicken into strips.
Serve the sliced chicken teriyaki over steamed rice, drizzle with any remaining teriyaki sauce, and garnish with sesame seeds and chopped green onions. Serve with steamed vegetables on the side.
